A species of fish belonging to the sturgeon family, found in places like the Heilongjiang, Ussuri River, and Songhua River, with a length of about four meters. This genus includes various species found in large rivers across Europe and Asia, resembling sturgeon, and was historically named "hàn." The body is elongated and spindle-shaped, with prominent lips; the back color ranges between tea brown and yellow-gray, while the belly is gray-yellow with rhomboidal hard scales. It has an asymmetrical tail fin, and its head has cartilage known as sturgeon bone, living in shallow coastal waters. For example: 鳇糟 (zǒngzāo - marinated hǒng fish); 鳇冰 (huángbīng - hǒng fish cartilage).
